Abstract

Snack drinks in traditional markets are small-scale industries that usually pay less attention to food safety. Snack drinks such as es cendol which tastes good, sweet, fresh. The manufacturing process can be added with food additives (BTP), namely artificial sweeteners, such as saccharin and cyclamate. Consuming excess saccharin and cyclamate can interfere with health if you consume them at levels that exceed the maximum limit. The purpose of this study was to determine the content and levels of cyclamate in ice cendol sold in the Isimu and Limboto markets, Gorontalo Regency. The research carried out is Experimental research with a laboratory approach which is carried out through experiments using six samples of cendol which was carried out qualitatively by testing the color reaction and cyclamate by testing, while quantitatively by using HPLC test. The results showed that all samples of cendol ice were negative for saccharin and there were 2 positive cyclamate samples from the Isimu market, code of Gorontalo Regency where sample A with a concentration of 150.36 mg/kg and sample code C with a concentration of 17.0 mg/kg which indicates that all samples do not exceed the maximum limit. This shows that the ice cendol circulating in the Isimu and Limboto markets, Gorontalo Regency meets the established requirements, where in Indonesia the use of artificial sweeteners is determined according to the Regulation of the Head of the Food Drug Supervisory Agency of the Republic of Indonesia (Perka BPOM RI) Number 11 of 2019 the maximum permitted level. for the use of cyclamate ranging from 0-11 mg/kg body weight and for saccharin 0-5 mg/kg body weight.
